Chocolate Processing > Depositing > Rotary Depositor
Rotary Depositor
- The rotary depositor is used in the confectionery and bakery industry for dough, stiff fondants and nut pastes.
- This depositor can process dough and pastes with large or small inclusions, nuts or large pieces of chocolate.
- The mixture is formed to the volumetric size of the piston being used.
- A rotary piston roller is fitted under two extruding rollers and a pressure box.
- The rotary piston roller is fitted with rows of cam-operated pistons; the timing of these can be advanced and retarded.
- The mixture fills the piston chamber cavity when under the extruding roller pressure box.
- The mixture is then pushed out from the rotary head by the cam-activated pistons as they rotate.
- When the pistons are fully extended a wire stripper removes the mixture from the piston face and deposits it directly on to an indexing tray or a constantly moving belt.
- Removable roller allows for fast changeovers for size changes
- Stainless steel and food grade plastics
